Dasca Vives is a family farm run by Josep Dasca and Alba Vives. We live in the Alt Camp region, and we farm for a living. We are professionally qualified as an agricultural & forestry engineer and as an enologist, respecively. We farm, acording to ecological and biodynamic principles, traditional crops of vines, olives, almonds, carob trees and sown fields too.
In this way we maintain the tradition of farming family lands, adapting them to ecological, principles and processing the products ourselves in order to sell them direct to the consumer. The crops we produce are wine, olive oil and nuts.
Combining the work of farming with enology, we both farm the land, and produce wines from organic grapes of the highest quality. So in the original sense of the term we can claim our wines “estate-bottle”.
We started the elaboration of the wine in the “Viver de Celleristes de la Conca de Barberà”, located in the premises of the former “Agriculture Cooperative of the region of Barberà de la Conca”. In the year 2014 we make one step more in our project and we create our own winery located in an old country house located in the middle of the vineyard.
The winery is located arround 3 km of Valls, in the region of Calders. The winery it’s a little construction, that in the past it was used for agriculture, and in 2014 we restored and adapted for the elaboration of quality wines.
The process of making wine begins in the vineyard. Once the grapes arrive at the winery, we take special care of the fermentations and macerations, to retain the aromas while the sugars are converted into alcohol. We do not add yeasts for fermentation, but instead we use those already contained in the grape skins, i.e. its own wild yeast. We do not use additives, except for a small amount of sulphites in some wines, to help it to keep.
We press the grapes ourselves, we supervise its aging in oak barrels, we blend the wines, then bottle and label them; all on the premises.
